Ideas to keep us accoutable for our New Years Resolutions... Are you laughing yet??

Hello 2014!

I saw a great idea this morning on the Today Show for keeping each other accountable for our New Years Resolutions.  Their idea was at the New Years Eve party the host provides post cards and each person writes one resolution on each post card (complete as many as needed and some of us need a lot of cards).

Cards are swapped between attendees at the end of the party.  During the year each person mails a post card to the person that made the resolution at random times to remind and hold them accountable for the resolution that was made.  This should stand as a reminder of our mindset on 12/31/13 and should also be used for a good laugh when you read some of the resolutions you have made.

Okay, since I sat at home on New Years Eve 2013 with a nasty cold and did not even get an invite to a party, here are a couple of my ideas.....

1) Get the girls together, family together, couples together, bunko group together, supper club together, small group from church together and have coffee, have lunch, have drinks, roll dice, have supper, have bible study and bring your own postcards.  Write your New Years Resolutions on them and swap those puppies out and wait for them to come back to you in the mail.  When you get a post cards in the mail on any given day think back on why you made that resolution and what you did or didn't do to keep it!

2) I have an idea for a group of my friends on Facebook and I think this would be a rather great alternative to getting together, since we all live a long way apart.  Start with a private message and include your closest friends.  This would work great for keeping high school or college classmates close between reunions.  It would be each persons responsibility to keep some postcards and stamps on hand.  Next share your resolutions with each other.  Write 1 resolution on each post card and address it to that person.  Also, go ahead and stamp them before stamps go up again!  Mail them out randomly throughout the year and see what happens.  Keep one another accountable and have a few laughs in the process.  Vickie and Terri are you ready for this???

Lucky and Loaded Pulled Pork and Black Eyed Peas Nachos





Lucky and Loaded Pulled Pork & Black-Eyed Pea Nachos

Ingredients

Directions

  • Add beef stock to a 7 quart slow cooker. Generously season pork with salt and pepper. Place pork in slow cooker and cook on low for 7-8 hours or until pork is pull apart tender.
  • When pork is ready and before removing from the slow cooker, prepare chips. On a rimmed, foil-lined baking tray (12 x 18) sprayed with cooking spray, add chips and sprinkle with cheese. Place in a 350 degree F oven for about 10 minutes or until the cheese is melted and bubbling.
  • While chips are in the oven, remove pork from slow cooker and place on a cutting board. Shred pork with two forks, removing any fat. Place shredded pork on top of chips with melted cheese. Layer with lettuce, tomatoes, corn and black-eyed peas. Drizzle pulled pork sauce over the top and serve. Dot with jalapenos (as many as you like).
  • ~An after thought. For fun we drizzled some of the nachos with blue cheese dressing...oh my goodness what a combination of flavors! I highly suggest trying it.
